Shrimp King Color

Yellow, orange and red shrimp cannot produce the pigments that give them their attractive body coloring themselves, but must ingest them with food. These pigments, known as carotenoids, are mainly found in algae, flowers, fruits and leafy vegetables. Shrimp and crabs convert carotenoids into their own pigments, particularly astaxanthin, which forms a molecular bond with the protein beta-crustacyanin. These molecular bonds are stored in special color cells and give the shrimp the species-specific coloring. The situation with shrimp is similar to that of the well-known pink flamingos: if these birds eat small, carotenoid-rich crustaceans such as brine shrimp, their plumage turns pink due to the carotenoids or astaxanthin they contain.
